Your next favorite week night mela that all the family loves is here. So many of my clients are looking for simple family meals that don’t require a ton of prep after a long day at work. I’m sharing one of our family favorite sheet pan meals that is exactly that. These BBQ meatballs are gluten and dairy free and made of ingredients you probably already have in the kitchen. They are also rich in kid friendly flavors, yet you can choose to mix in some extra fibers to make more of a complete meal. I can’t wait for you to try them!

What to pair with BBQ meatballs?

Being a culinary graduate, we are trained to always pair a protein with a starch and a vegetable. That being said, these will go perfectly well with any kind of rice and potato. I would specifically pair these with some kind of green vegetable like asparagus or broccoli (which is listed in the recipe). The carbs of the rice pair perfectly with the fibers of the vegetable and the fat/protein of the ground beef. This makes a perfectly balanced meal for your family.

Which BBQ sauce?

I’ve been on the hunt for a perfect bottled BBQ sauce that all of my family loves. I prioritize loooking for one without any high fructose corn syrup. Right now we are using Kinder’s BBQ. It’s available pretty widely and our kids love it. The ingredient list is simple enough that for me I am perfectly satisfied.

A better option may be making your own if time and sanity allow. For that, I would recommend this recipe.

BBQ meatballs

Sheet pan
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 35-40minutes
Difficulty: Easy
Servings: 8-10 servings

Equipment

  • Equipment:
  • Food processor
  • Sheet pan

Ingredients
  

  • 2-3 lbs of ground red meat
  • 3 eggs
  • 2 small carrots grated
  • 1 small onion grated
  • 1/2 c gluten free bread crumbs
  • 3 Tbs stone ground mustard
  • 1 tsp salt more to taste
  • 1/2 tsp pepper
  • 1 tsp Worcestershire sauce
  • 1 c your favorite BBQ sauce
  • Sides:
  • Rice
  • Broccoli crowns

Instructions
 

  • Grate onion and carrots in food processor with grater or chop fine by hand
  • Add all meatball ingredients (except bbq) to a large bowl and mix thoroughly
  • Preheat oven to 375*
  • Scoop with 2 in cookie scoop onto parchment lined sheet pan
  • Bake for 25 minutes until slightly brown on the tops.
  • While in oven, cook rice and steamed broccoli
  • Remove from oven and brush BBQ sauce on meatballs. This may spread easier if sauce is already heated.
