No, it doesn’t have to be all green, but there’s something so satisfying about this herb-packed twist on classic coleslaw. With crunchy cabbage, fiery peppers, creamy lime dressing, and a burst of garden-fresh herbs, this Spicy Green Garden Coleslaw is the perfect side to liven up any meal. Plus, I think the monochromatic look is quite fun!
Why Cabbage Belongs in Your Kitchen
Cabbage might seem humble, but it’s loaded with nutrients that do wonders for your body.
- Rich in Vitamin K – Supports healthy bones and proper blood clotting.
- High in Fiber – Keeps your digestive system running smoothly.
- Supports Detoxification – Contains compounds that help your liver eliminate toxins.
- Boosts Gut Health – Naturally feeds good gut bacteria, especially when enjoyed raw.
Ps: It has an amazing shelf life and it’s also is terribly cheap!
The Bold Benefits of Hot Peppers & Herbs
Adding hot peppers and herbs to your coleslaw doesn’t just add flavor—they also bring powerful health benefits to the table:
- Hot Peppers: Full of capsaicin, a compound that may boost metabolism, ease pain, and support cardiovascular health.
- Cilantro (or Parsley): Packed with antioxidants, supports detox pathways, and offers a fresh, cleansing flavor. Also realize, herbs count as greens too!
- Green Onions: Provide a mild allium kick while offering antibacterial and antiviral properties.

Variations & Serving Tips
Dairy-Free Option: Swap sour cream for extra virgin olive oil
Not a Cilantro Fan? I know. I used to be one of you- but fresh parsley is a great substitute and offers its own nutritional perks.
Serve this slaw with:
- Tacos (especially fish or carnitas!) This is defiantly going on my meal plan next week
- BBQ sandwiches
- Grilled meats
- Or enjoy it as a crisp, stand-alone salad (I love to keep a premade salad in the fridge for snacks throughout the week)
