Turkey Buffalo Ranch Meatballs
with rice + green beans. Double the meatball recipe so you can be sure to have leftovers

- 1 lb ground turkey
- 1/2 cup GF breadcrumbs
- 1 egg whole
- 3 tablespoons ranch seasoning
- salt
- red pepper flakes optional
- Hot sauce optional
- 1 cup rice rinsed
- 1 lb green beans trimmed
- avocado oil spray
- Fresh parsley chopped
Rinse rice and cook as desired. I prefer cooking my rice in the instant pot in a 1:1 ratio with cold water. Cook at medium pressure for 3 minutes, natural release for 10 minutes. Mix all meatball ingredients together. Make into balls and put on greased bakings sheet. Bake on 350 degrees for 25 to 30 minutes.
Spread green beans out on a sheet pan. Sparywith avocado oil spray. Season with salt. Roast at 425* for 15 minutes. (Steam beans if you don't have access to a separate oven for roasting temp)
Cover meatballs with hot sauce if desired. I keep the hot sauce off initially and bring the bottle to the table.
Serve with rice and roasted green beans
